January is coming right along now, isn’t it? We are just about two weeks into the new year already… CRAZY. Plus it’s almost my birthday! (Jan 27)
I’ve been super busy and starting tomorrow I’m only going to even busier as I embark on my journey to become a yoga instructor. With that being said, being mindful has never been more crucial.
I’ve been trying to write a blog post all week but erased pretty much everything that I came up with. I saved my favorite thought from each draft post and jumbled them all together into this one… I apologize for the randomness! BUT;
Mornings Are Your Friend
I go through seasons where I’m a morning person and others where I’m rushing out the door with half my makeup done. I’m currently on the latter. But I really am going to make it a point to make my mornings better. Your morning experience sets the tone for the rest of your day, so it’s kind of important.
Gut Health Is The New Black
But really. Have you jumped on the bandwagon yet? I have. I’m obsessed with healing my gut. I realized years ago (when antibiotics were the only thing helping my skin) that my issues were coming from the inside-out. I’ve since cut out all antibiotics, birth control, hormones in my food, foods that wreck my body, etc. And I’ve added in a ton of really beneficial stuff like fermented foods, probiotic supplements, tea (warm drinks are better than cold – your body sustains 98 degrees for a reason), etc. Gut health is in right now, and I couldn’t be happier! What a time to be alive, amen?
Social Media Is Everything
I know, I’m making our generation look bad. Except I’m not. Times have changed and if you aren’t taking full advantage of social media, then you’re behind. Gone are the days when social media was for just connecting with friends. I would venture to say that I’ve learned more valuable information and knowledge from social media than I did in high school. Why? How? Because it’s real life applicable stuff. It’s in real time. I’m not going to put down my phone to please my parent’s generation or to avoid the stereotypical nonsense. I am a millennial and I’m proud of it. Embrace it. We live in the greatest time in history. If you’re not embracing social media then you’re going to fall for all of it’s “negative” social impacts. If you’re not using social media to grow yourself, then you’re missing out on a HUGE (and free) opportunity for growth.
VEGAN VEGGIE CHILI RECIPE
Okay enough about that… On to food! I posted a delicious vegan veggie chili recipe on my Insta story (@espressoandfit) and received a tonnnn of questions about it, so here you go!
I make this often and to be honest I just throw together whatever I have in my kitchen at the time. It’s pretty much impossible to mess up. Which is good, because I actually hate to cook. Read this if you’re interested in what I do and don’t eat.
1 JAR OF ORGANIC MARINARA SAUCE.
1 CAN OF ORGANIC BLACK BEANS (OR ANY KIND OF BEANS)
1 YELLOW BELL PEPPER AND 1 WHITE ONION, CHOPPED
1 RED BELL PEPPER AND ABOUT 5 MUSHROOMS, CHOPPED
ABOUT A HANDFUL OR TWO OF KALE
ABOUT 1TSP OF RED PEPPER FLAKES AND A SPRINKLE OF SEA SALT, CUMIN AND CHILI POWDER. (TO TASTE)
ADD ABOUT A CUP OR SO OF WATER, MIX AND HEAT ON LOW (STOVETOP)
** I also added a pack of lentils that I had in my pantry to add some more protein. You can add rice or quinoa as well.
** You can reheat for a few days or freeze for later. It’s really yummy and filling and HEALTHY. Add just about any veggie or bean.

1 Jar organic marinara
1 Can of black beans (or any beans)
1 Full yellow and red bell pepper, chopped
1 Full white onion, chopped
5 Ish mushrooms, chopped
2 Handfuls of kale
1 Tsp of crushed red pepper flakes
A sprinkle of sea salt, cumin and chili powder (to taste)
OPTIONAL lentils, brown rice or quinoa for extra protein
1.5 Cups of water
